    Esperanza, an Auberge Resort announces 2014 Food of Place culinary series

    Award-Winning Cabo San Lucas Resort Offers New Culinary Experiences

    CABO SAN LUCAS, MEXICO (January 22, 2014)Esperanza, An Auberge Resort, an award-winning intimate beachfront escape in Cabo San Lucas, Mexico, unveils new culinary experiences as part of Auberge Resorts’ “Food of Place” program. Led by Executive Chef Gonzalo Cerda, this year’s series features a new collection of culinary adventures that reflect the culture and flavors of Mexico’s Baja region. Guests of all ages can participate in hands-on private, semi-private and complimentary classes where they will learn how to make tamales, mole sauces, ceviches and more.

    “The ongoing Food of Place program at Esperanza celebrates the culinary traditions of the Baja region and showcases Chef’s fresh locally-driven cuisine,” said Marc Rodriguez, General Manager of Esperanza, An Auberge Resort. “We’re excited to provide our guests with a cultural connection to our resort’s seaside location through our extensive collection of culinary classes.”

    Each Auberge Resort features a seasonal 2014 Food of Place program that is inspired by each destination. Esperanza’s culinary programs are held every Tuesday at the resort’s signature Cocina del Mar restaurant and include the following new experiences:

    FebruaryMole-Making Class – Join Chef Cerda as he teaches guests how to make traditional mole sauce and a few of his favorite chicken and pork mole dishes. Guests will learn about the origins of mole, prepare the savory chocolate-based sauce with chili peppers, spices, and nuts and take home a jar of homemade sauce. ($45/person)

    MarchChili Varieties & Mexican Sauces – Guests are invited to join Chef Cerda in Esperanza’s biodynamic, organic herb garden to pick seasonal chili peppers and learn how to use them in preparing a variety of authentic Mexican chili-based sauces.  The hands-on experience teaches guests how to grow and harvest chilies and use them to spice up traditional dishes. ($45/person)

    AprilChocolate Cascarones – Children are invited to join Chef in a one-hour class where they will hand make chocolate eggs or “cascarones” and decorate them with toppings and candies. A part of the Mexican culture, cascarones are confetti eggs filled with small toys or goodies prepared to celebrate the Spring season. (Complimentary)

    MayHandmade Corn Tortillas – Guests will explore authentic Baja flavors and traditions by learning how to make a variety of homemade corn tortillas, a staple in Mexican cuisine. The culinary team will teach guests how to press local stone-ground corn to make perfect soft, aromatic tortillas. ($45/person)

    JuneAguas Frescas – Guests will learn how to make The Spa at Esperanza’s famous aguas frescas – healthy Mexican beverages prepared with indigenous Mexican fruits, vegetables and desert plants. Spa Director Jose Ramon will also share the various health benefits of aguas frescas, which include digestion support, rehydration, burning fat and providing energy boosters. Mexican flavor combinations include: Cantaloupe Horchata, Aloe Vera and Prickly Pear, Watermelon Ginger, Mexican Cinnamon Chocolate, Coconut Rum, Rice Pudding, Guava, Cucumber Chile Pepper and more.     JulyTamales – Guests will experience the aromas, flavors and culture of true Mexican cooking while learning to make chicken, pork, vegetarian and pineapple tamales with Esperanza’s acclaimed chefs. Made with ground corn and various fillings, tamales are Mexico’s favorite comfort food and a genuine crowd-pleaser. ($45/person)

    AugustCeviches – Nothing is as quintessentially Los Cabos as ceviche and Esperanza’s culinary team will inspire guests with a new appreciation for this refreshing and surprisingly versatile appetizer.  With Chef Cerda’s hands-on “sea-to-table” cooking class, guests can stir up seafood ceviches in no time.     SeptemberPescado Zarandeado – Los Cabos is renowned for its local seafood and guests can celebrate the fruits of the Pacific Ocean by learning how to prepare Pescado Zarandeado, a delectably seasoned roasted fish, often served with warm tortillas and lime to make delicious tacos. ($45/person)

    OctoberMargarita-Making Class – Esperanza’s head bartender will teach guests how to prepare signature margarita cocktails using fresh produce from Chef’s organic herb garden. Guests will also receive easy recipes to recreate their favorite drinks at home. ($45/person)

    NovemberPumpkin Carving Tournament – Guests of all ages can get into the fall spirit with a pumpkin carving contest and pick up some creative design techniques from the culinary team. (Complimentary)

    DecemberMexican Desserts – Guests can enhance their dessert repertoire by mastering a few distinctively Mexican treats with Esperanza’s Head Pastry Chef. Guests will prepare traditional Mexican desserts including tres leches cake, bunuelos, churros and spicy hot chocolate. ($45/person)

    Esperanza, an Auberge Resort introduces Food of Place Culinary Series

    Guests Invited to Explore Regional Culinary Traditions with New Auberge Adventures Experiences

    CABO SAN LUCAS, MEXICO (July 1, 2013)Esperanza, An Auberge Resort, an award-winning intimate beachfront escape in Cabo San Lucas, Mexico, announces the debut of its latest culinary adventures as part of Auberge Resorts’ Food of Place program. Created exclusively for Esperanza guests, owners and members of all ages, the new collection of culinary programming is inspired by the culture, flavors and traditions of the resort’s Baja setting. During the new culinary series led by Executive Chef Gonzalo Cerda, guests will participate in a variety of hands-on cooking and cocktail making classes, wine and tequila tastings, and special dinners hosted by guest chefs – all held on the resort’s private beach.

    Each resort’s seasonal Food of Place program has been designed to reflect each Auberge destination with private, semi-private and complimentary experiences, which can be booked by calling (855) 331-2226. Esperanza’s new culinary programming includes:

    July: Margarita-Making Class – Esperanza’s head bartender will teach guests how to prepare signature margarita cocktails using fresh produce from Chef’s organic herb garden and will share easy recipes for guests to recreate their favorite drinks at home. (Complimentary; available everyday)

    August: Chocolata Clams – Guests can enjoy a sunny afternoon learning about the ocean life found in the Sea of Cortez while preparing a refreshing oyster and indigenous “chocolata” clam ceviche with Executive Chef Gonzalo Cerda. ($115/person; available on Thursdays)

    September: Seafood Paella Cooking Class – Executive Chef Gonzalo Cerda offers a cooking class inspired by Esperanza’s coastal setting where guests will use an assortment of local seafood from the Pacific Coast to prepare a traditional Baja dish. (Complimentary; available everyday)

    October: Pumpkin Carving Tournament – Guests of all ages can get into the Halloween spirit with a pumpkin carving contest and pick up some creative design techniques from the culinary team (Complimentary; available everyday)

    Love for Locals – With more than three decades of promoting Mexican food culture locally, acclaimed chef Margarita Carrillo will share her passion for protecting the country’s culinary traditions and countryside with guests during special dinners at Cocina del Mar oceanfront restaurant on October 25 and 26.     November: Mexican Clambake – Guests will join the culinary team at sunset for a Mexican-style clambake on the resort’s private beach as they will prepare and enjoy shellfish unique to Esperanza’s seaside location including Pacific clams, chocolata clams, black mussels and scallops accented with chorizo.     Champagne & Coastal Views – On November 15 and 16, guests are invited to enjoy coastal views of the Sea of Cortez and indulge in a spectacular weekend of small bites, bubbly and cocktails at The Lounge followed by dinner at Cocina del Mar, which will showcase Louis Roederer’s champagne portfolio.     December: Tequila Journey – Esperanza’s Master Tequilero will lead guests on a journey into the origins of tequila and the complex and meticulous process of its creation.     Award-Winning Cabo San Lucas Resort Invites Groups to “Meet, Mix and Mingle” with Complimentary Cocktail Making, Special Room Rates and Value-Added Perks 

    CABO SAN LUCAS, MEXICO (January 9, 2013) Esperanza, An Auberge Resort, invites groups to meet, mix and mingle in Cabo with the launch of new meetings and events offerings. Guests can spice up corporate retreats, meetings and private events with complimentary “Margarita and Mojito Mixer” cocktail making classes hosted by Esperanza’s Master Tequiliero, special group rates beginning at $375 per night and value-added perks, including complimentary casita upgrades based on availability and 20 percent off spa treatments.

    During Esperanza’s new complimentary “Margarita and Mojito Mixer” class, guests create their own custom cocktails while enjoying light appetizers.     Esperanza, an Auberge Resort, launches new sea life adventure experiences

    Guests Can Explore the Sea of Cortez with Turtle Releases, Whale Watching Tours and Swimming with Whale Sharks 

    CABO SAN LUCAS, MEXICO Esperanza, An Auberge Resort, the award-winning Cabo San Lucas resort, is launching a collection of new sea life adventure experiences as part of its Auberge Adventures program. From September 2012 through March 2013, guests can enjoy the rich variety of sea life native to the Sea of Cortez with seasonal experiences, including releasing sea turtles into the ocean, swimming with whale sharks and whale watching. Created exclusively for Esperanza guests, these programs give visitors of all ages an up close look at the local sea life, along with culinary delights and luxurious transportation, for an exciting day of ocean exploration. Additionally, a portion of Esperanza’s sea life adventure program bookings will be donated to various local organizations dedicated to preserving and protecting the ocean environment of the Baja California Sur coastline.

    Turtle Release at Sunset: Guests will take part in the preservation of endangered species by adopting a baby sea turtle and releasing it into the ocean at El Suspiro Beach at sunset. This three-hour adventure comes with a turtle adoption certificate, roundtrip ground transportation and drinks and appetizers on the beach prepared by the resort’s culinary team. (Available September – October 2012)

    Swimming with Whale Sharks: Spotter planes, boats and expert guides will navigate guests through the waters outside of La Paz to popular feeding grounds where they will swim with whale sharks measuring up to 40 feet and watch these gentle giants feed on plankton. This eight-hour trip includes roundtrip ground transportation to La Paz, an authentic Mexican breakfast, lunch and snacks prepared by Esperanza, wet suit and snorkel equipment as well as underwater photography and videography upon request. (Available October 2012 – March 2013)

    Whale Watching Tour: An intimate whale encounter experience where guests will get up close to gray whales and their calves in Magdalena Bay Sanctuary and maybe even witness the birth of a baby whale. This eight-hour excursion begins with a flight on a Cessna Grand Caravan plane over the peninsula coastline to view the Bay from above, followed by a guided boat tour; and includes roundtrip ground transportation, lunch at a local seafood restaurant and flight bites provided by Esperanza.     Industry Veteran Brings 20 Years of Hotel Management Experience To Award-Winning Cabo San Lucas Resort

Rodriguez, a dual citizen of Mexico and Ireland with more than two decades of industry experience across the globe, will oversee all operations for the acclaimed Relais & Châteaux property dramatically set along the coast overlooking the Sea of Cortez.

With the debut of its “Cocina del Mar” dinner menu, Executive Chef Gonzalo “Gonzo” Cerda and his team will transform evenings at El Restaurante with a new menu that highlights the region‟s fresh seafood from the Sea of Cortez and Pacific Ocean accented with some of the finest Mexican spices and organic produce from local purveyors.

    Guests ordering from the ever-changing menu will be able to experience a variety of course options that draw from elements of the sea and spotlight seasonal catches, including:

    Sense of Beginning (starters): Specialties include Seafood “Tortilla” Soup with poached lobster, scallops, shrimp and littleneck clams combined with crispy corn tortillas, guajillo chili, cilantro and avocado; Chilled Avocado Soup with green apple granite and mint oil from Esperanza‟s garden; and The Tower – seared ahi tuna and Baja lobster, pickled red onion, seaweed salad, avocado, sriracha remoulade and Chilean “pebre” salsa.

    Gonzalo Cerda named new executive chef of Esperanza, an Auberge Resort

    Chef Cerda To Oversee Five Restaurants At Award-Winning Cabo San Lucas Resort

    CABO SAN LUCAS, MEXICO (October 14, 2010) – Auberge Resorts today announced the appointment of Gonzalo Cerda as Executive Chef of Esperanza, their world-class resort in Cabo San Lucas, Mexico. A native of Argentina, Cerda will add his own personal touches to the unique, traditionally-inspired dishes at the resort’s five restaurants including El Restaurante, dramatically carved into the bluffs overlooking the Sea of Cortez and Las Estrellas, its latest offering serving a variety of casual lunchtime fare.
    “Gonzalo brings a great deal of experience to his role at Esperanza and we welcome him to our family,” said General Manager Severino Gomez. “Having previously led restaurant teams at top resorts around the world, he has a deep appreciation for the level of service our guests have come to expect and I have no doubt that he will take us to even greater heights.”
    Prior to joining the team at Esperanza, Cerda spent several years in senior restaurant positions with Four Seasons Hotels & Resorts in Uruguay, Canada, Costa Rica and Chile. He has also served as the host of several cooking television shows including the Canadian series “Shopping Bags” and Costa Rica’s popular “Chino Latino.” Cerda began his professional career in his native Argentina following his formal education at the Azafran Culinary Academy in Cordoba, Argentina and subsequent training at restaurants in Chile, Peru, Bolivia, Brazil, Paraguay, Uruguay, Nicaragua and Colombia.
